Ingredients: - 300 g brie cheese (use camembert if not available) - baking paper Ingredients for berry sauce: - 1 cup sugar - ¼ cup water - 200 g frozen berries - 3 sprigs fresh thyme (place on board & bruise with the back of a wooden spoon to release the aromas) - 1 orange (juice & rind) - salt & ½ tsp cracked black pepper Method: - pre-heat the oven to 180°C - place the brie onto the baking paper & spoon the berries over. Partially close the paper - bake for approximately 10’ or until soft. - Serve immediately Method for berry sauce: - place all the sauce ingredients – except the berries – into a pot & allow to simmer for 10’ - remove from heat & add berries. Allow to draw & cool *The sauce can be made up to 3 days earlier & kept refrigerated // This is an ideal dish to make into smaller portions & serve as an individual starter with hot bread or crackers.
