The 2000 Dom Pérignon Rosé is a turning point for the house, as it represents a move towards a more ambitious and bold style. The utterly stunning nose soars from the glass in a constellation of dried cherries, orange zest, wood smoke, chalky minerality, rye toast and a gentle touch of meatiness. On the palate the wine is deep, full-bodied and very complex, with great mid-palate intensity and an elegant mousse. Lovely to drink now, but it will certainly hold for years to come.
