The Frescobaldi family carefully selected these particular wheat varieties specifically for their pasta, as these plants are well-suited to the soils and temperate climate of the region and above all, their inimitable flavor.
The pasta itself is made at Pastificio Artigiano Fabbri, an artisanal pasta factory in the Tuscan region of Chianti where time-honored family traditions dictate the pasta-making process. Extruded through bronze dies and slowly air-dried for 84 hours at the optimal temperature, Tirrena Penne Rigate boasts that rough and ridged texture that cooks up perfectly while still retaining the natural flavor of the wheat.
