The Last Glass, the Last Sunset
August is the last month before harvest, and the last month of summer's leisure. As the season winds down, we deserve to spend it well — with wines that keep us cool, and food to match, from the day’s first pour to the last light of evening.

OneOff PetNat, from Foivos Papastratis, opens the day with playful bubbles and gentle sweetness — bergamot, ripe apricot, honeysuckle. It needs a companion, not a competitor: light prawn and vegetable tempura with a ponzu-soy dip. The wine's sweetness meets the dip's salinity effortlessly, while its Savatiano citrus echoes the ponzu itself.

By midday, a zesty Misty Cove Estate Sauvignon Blanc and its signature acidity call for a goat cheese salad. Sear the chevre in breadcrumbs first — the warm texture softens the tang without overpowering the wine's fruit. Add green apple for harmony, and a touch of mint and chives to mirror the wine's herbal edge.

As the light turns gold, Inama Vin Soave pairs beautifully with a citrus crudo — fennel, Marcona almonds, a light olive oil dressing. The Garganega grape's mineral edge lifts the raw fish, while orange slices and fennel shavings echo the wine's white flowers and citrus.

Dusk brings the day’s centerpiece: grilled sea bream with charred lemon, cherry tomatoes and wild herbs, alongside Arktos Pnoe, a mountain-grown Assyrtiko blend. Its bright acidity and saline minerality cut through the richness of the charred fish, while grilled fennel and tomatoes draw out the wine's stone fruit and lime-forward notes.

By the time the glasses are empty, so is the sky. Some months end with a countdown, but August should end with a toast — the last glass, the last sunset, the last excuse we need to slow down.
